We have sourced our range of foods from Europe, the Far East, Australia, South America, North America, and India, priding ourselves on our ability to seek out the finest products globally. Our suppliers range from giant enterprises like Arla in Denmark and Zanetti S.p.A. in Italy to smaller suppliers like Cassanova, Theo Bauwens and D’Autore. On a local level, they include GCMMF Ltd. – the largest milk cooperative in Asia – and small-scale suppliers of gourmet cheeses, charcuterie, and processed meats.

What is your overall impression of Pâtissier Chocolate?

Pâtissier Chocolate is an Artisanal Brand being produced using the best of ingredients across the globe. Pâtissier Chocolate perfectly gels with Fortune’s ideology of bringing in the finest ingredients for Chefs to craft their dishes. The Brand over the last 3 years have created a preference with Pastry Chef and Chocolatiers. The flavour notes on all the variants are so unique and this makes it different to all the other brands.


When do you look for chocolate and cocoa products, what are the main features the right product needs to have for you?

Sourcing of the right cocoa beans and other ingredients is the most important factor in getting the final product. A unique blend of cocoa beans and its roasting process gives a profound flavor to each variants. The fluidity in the chocolates helps the chefs in working with the product giving the final product a beautiful shine and flavor.

We are also delighted to share a second recipe from 2 students of Lavonne Academy, who currently runs a small business independently and uses Pâtissier Chocolate in their desserts.

  • Recipe: Mon Petite Chocolate Cake with Pâtissier Chocolate

Chocolate Cake


Ingredients:

Butter 281g

Castor sugar 270g

Pâtissier Chocolate Artisan 22-24% Cocoa Powder 81g

Flour 243g

Baking Powder 10g

Baking Soda 5g

Yolks 101g

Eggs 130g

Milk 182g

Pâtissier Chocolate Artisan Dark 70% Chocolate 90g


Steps:

  1. Combine milk and chocolate by warming over milk and set aside to cool down.

  2. Cream the butter and sugar until lighter in colour and fluffy.

  3. Add eggs slowly.

  4. Alternate the flour and the chocolate mixture.

  5. Bake at 180°C until done.


Ganache

Ingredients: Pâtissier Chocolate Artisan Dark 54% Couverture 200g

Fresh Cream 200g


Steps:

  1. Heat up the cream.

  2. Partially melt the chocolate.

  3. Pour the cream on the chocolate and emulsify to smooth consistency.

  4. Cover with cling film and set aside to cool at room temperature.


Assembly

Once cake has cooled, slice into the thickness required.

Layer it with the ganache alternating with sponge layers.

Cool in the fridge and frost the cake with ganache smoothly on the outside.


Shards

Temper milk and dark chocolate and set in sheets as needed.

Break and decorate on the frosted cake.
