Monthly Distributor Chef Highlight: Chef Ian Wong

Introducing Chef Ian Wong, one of the chefs in our Pâtissier Chocolate's team.

What was your background and journey of growth?

Having over 16 years of professional experience in the culinary scene, Chef Ian Wong Hong Chong has worked in both hot and cold kitchens at various prestigious establishments. Since starting his role as a Chef De Partie in charge of doing pastry in year 2000, he has cultivated his passion in dessert creations and pastry. His culinary knowledge and training enable him to create a wide variety of exquisite cakes, desserts and baked goods.


Chef Ian joined Aalst Chocolate in August 2015 as Aalst’s Pastry Chef and has numerous experiences in doing global demonstrations for Pâtissier Chocolate, Aalst’s Food Service Brand.

  • Thoughts on using Pâtissier Chocolate as an ingredient?

The Pâtissier Chocolate has an extensive product range. The chocolates are easy to use and can be used in a variety of applications from pastry making to confectionery which is ideal for me.

  • What is your inspiration behind in creating the recipes?

Abundance

I love kumquats, so I decided to create a dessert incorporating this flavor for the Chinese New Year. It is a rich white chocolate cake and hidden in it is a delicious orange surprise!


Creme Cocoa

My rendition of a typical creamy dark chocolate and crispy (back to basic). This is a combination of rich and luxurious chocolate with smooth, silky creme. The deep flavour of dark chocolate accented with sweet lightness, combined with the crispy cocoa nibs base complements each other perfectly.
