Classes are conducted in Aalst Chocolate Academy located at Level 4, 24 Tuas Ave 7 Singapore 639273. Here are some modules we will be covering:

ENTREMETS & PETITS GATEAUX CLASS
BY CHEF DAVID LANDRIOT
Level: Intermediate
What you will learn: We will produce a range of 2 entremets and 4 petits gateaux using the different categories of Patissier products.
- You will learn how / when to use our different products such as concentrates, chocolates, and couverture to extract their best benefits.
- We will cover all categories of recipes from sponges, cremeux, mousses, whipped creams to glazes, velvets, etc…
- You will learn to make easy and effective chocolate decorations.
- We will work around white, milk and dark chocolate as well as our praline pastes.
Class style: Hands-on (up to 12)
