Pâtissier Chocolate Workshop with Classic Fine Foods Vietnam (Ho Chi Minh City Office)

In partnership with our exclusive Vietnam Distributor, Classic Fine Foods Vietnam, we conducted a workshop in CFF Vietnam Ho Chi Minh City Office on 26th April 2022 (Tuesday) featuring beautiful chocolate desserts made by Chef Matthieu Lagarrigue from

C’est Bon Bakery. Chef Matthieu is also a pastry teacher at a vocational school in Hanoi, Vietnam.


Over 22 guests from different bakeries and food processors joined this informative workshop. This workshop provided guests with an opportunity to learn about the fundamentals of chocolate while tackling the difference between real chocolate and compound, as well as understanding which ingredients are best for which products with an in-depth introduction to our Pâtissier Artisan Chocolate and Gourmand Compound range by Chef Matthieu.


Compound is typically more popular to Vietnamese bakers; thanks to its texture and melting behavior thus making working with “real chocolate” and understanding the tempering process a challenge for most in Vietnam. We hope that this workshop was educational, informative and useful for our guests!


Guests were also able to taste trending recipe creations ranging from chocolate bonbons to chocolate cakes and be assured of the quality of Pâtissier's range of chocolate products. A big thank you to Classic Fine Foods Vietnam for hosting us. Below are some highlights of the workshop:
